Black Bean Sun-Dried Tomato Pasta Salad



A delicious and nutritious pasta salad featuring the rich flavors of black beans, sun-dried tomatoes, and feta cheese. Perfect for a quick and satisfying meal.

Ingredients:

  • 1 cup black beans, cooked
  • 2 cups cooked pasta
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions:

Black beans, cooked pasta, feta cheese, sun-dried tomatoes, red onion, and parsley should all be combined in a big bowl

Mix the olive oil, balsamic vinegar, salt, and pepper in a small bowl

Make sure everything is well coated by gently tossing the salad after adding the dressing

To allow the flavors to mingle, refrigerate for a minimum of half an hour before serving
