Corn Off the Cob Soup
The soup is made with fresh corn off the cob, onions, garlic, thyme, and a flavorful broth that is cooked slowly until it is just right.
Ingredients:
- 4 cups corn kernels
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 teaspoon thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
In a slow cooker, combine corn kernels, chopped onion, minced garlic, chicken or vegetable broth, thyme, salt, and pepper
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until vegetables are tender
Using an immersion blender, blend the soup until smooth
Alternatively, transfer the soup to a blender and blend in batches until smooth
Stir in heavy cream and adjust seasoning if needed
Serve hot, garnished with chopped fresh parsley
