Bagel Burrito Breakfast Burrito with Bacon



A delicious and satisfying breakfast burrito made with bagels, crispy bacon, scrambled eggs, sautéed vegetables, and melted cheddar cheese. It's a hearty morning meal that will keep you full and energized for the day ahead.

Ingredients:

  • 2 bagels
  • 4 strips of bacon
  • 4 large eggs
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced onion
  • 1/4 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Cooking oil for frying

Instructions:

Preheat your oven to 350F 175C

Place the bacon strips on a baking sheet and bake for 15-20 minutes or until crispy

Remove and drain on paper towels

Crumble the bacon once cooled

While the bacon is cooking, slice the bagels in half and toast them in a toaster or oven until they are golden brown

In a skillet, heat a small amount of cooking oil over medium-high heat

Add the diced onion, red bell pepper, and green bell pepper

Saut for about 2-3 minutes until they start to soften

Push the sauted vegetables to one side of the skillet and crack the eggs into the other side

Scramble the eggs with a spatula and cook until they are no longer runny, mixing them with the sauted vegetables as they cook

Season the egg and vegetable mixture with salt and pepper to taste, and then stir in the crumbled bacon and shredded cheddar cheese

Continue to cook for another minute until the cheese is melted

To assemble the bagel burrito breakfast burrito, place a toasted bagel half on a clean surface

Spoon some of the egg, bacon, and vegetable mixture onto the bottom half of the bagel

Top it with the other half of the bagel to form a sandwich

Repeat this process with the remaining bagels and filling
