Ingredients:

  • 4 haddock fillets
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped parsley

Instructions:

Salt and pepper the haddock fillets, then coat them in flour and shake off the extra

Put olive oil in a big skillet and heat it over medium-high heat

Put the haddock fillets in the pan and cook for three to four minutes on each side, until they are golden brown and flaky

Take it out of the pan and set it aside

Over medium heat, melt the butter in the same pan

It will take about two to three minutes of cooking until the butter turns golden brown and smells nutty

To the browned butter, add the minced garlic and cook for one minute

Add the white wine and lemon juice and mix them together by stirring

A little less than two to three minutes of simmering should do it

Add the haddock fillets back to the pan and cover them with the sauce

Add one more minute of cooking to heat everything through

Add chopped parsley as a garnish before serving
