Instant Pot Methi Dal



With fresh fenugreek leaves and yellow split lentils, Instant Pot Methi Dal is a healthy and tasty vegan dish. This dish is filled with fragrant Indian spices and is a great way to relax.

Ingredients:

  • 1 cup yellow split lentils dal
  • 1 cup fresh fenugreek leaves methi, chopped
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 green chili, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 3 cups water
  • 2 tablespoons oil

Instructions:

Wash the lentils thoroughly and drain the water

Turn on the Instant Pot and select the 'Saut' function

Heat oil and add cumin seeds

Once the seeds crackle, add chopped onion, garlic, ginger, and green chili

Saut until onions turn translucent

Add chopped tomatoes and cook until they soften

Add chopped fenugreek leaves, turmeric powder, coriander powder, red chili powder, and salt

Mix well

Add washed lentils and water

Stir to combine

Close the lid of the Instant Pot and set the valve to 'Sealing' position

Select 'Manual' or 'Pressure Cook' mode and set the timer for 8 minutes at high pressure

Once the cooking is complete, allow natural pressure release for 5 minutes, then manually release the remaining pressure

Open the lid carefully and give the dal a stir

Adjust the consistency if needed

Serve hot with rice or bread
