Keto Strawberry Cheesecake for Two
Ingredients:
- 150g cream cheese, softened
- 2 tbsp powdered erythritol
- 1/2 tsp vanilla extract
- 1 large egg
- 1/4 cup almond flour
- 1 tbsp melted butter
- 1/4 cup fresh strawberries, sliced
- 1 tbsp powdered erythritol for strawberry topping
Instructions:
Preheat the oven to 325F 160C
In a mixing bowl, beat cream cheese, powdered erythritol, and vanilla extract until smooth
Add the egg and mix until fully incorporated
In another bowl, mix almond flour and melted butter until crumbly
Press the almond flour mixture into the bottom of a small yellow glass dish
Pour the cream cheese mixture over the crust
Bake for 20-25 minutes or until the cheesecake is set but still slightly jiggly in the center
Remove from the oven and let it cool for about 10 minutes
Meanwhile, in a small saucepan, heat the sliced strawberries and powdered erythritol over low heat until the strawberries release their juices and the mixture thickens slightly
Top the cheesecake with the strawberry topping
Refrigerate for at least 2 hours before serving
