Sweet and Salty Alfajores



Indulge in the delightful combination of sweet and salty with these homemade alfajores. A traditional treat with a twist!

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup dulce de leche
  • 1/4 teaspoon sea salt

Instructions:

Preheat the oven to 350F 175C

In a bowl, whisk together the flour, cornstarch, baking powder, and salt

In another bowl, cream the softened butter and powdered sugar until light and fluffy

Stir in the vanilla extract

Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms

Form the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes

On a floured surface, roll out the chilled dough to about 1/4-inch thickness

Using a round cookie cutter, cut out cookies and place them on a baking sheet lined with parchment paper

Bake for 12-15 minutes, or until the edges are lightly golden

Allow the cookies to cool completely on a wire rack

Spread a layer of dulce de leche onto the flat side of half the cookies

Sprinkle a pinch of sea salt over the dulce de leche

Top with the remaining cookies to create sandwich cookies

Dust with powdered sugar for an extra touch
