Vegan Sweetcorn Spinach Shorba
A comforting vegan soup that combines the sweetness of corn with the earthiness of spinach, spiced with Indian flavors.
Ingredients:
- 1 cup sweetcorn kernels
- 2 cups spinach, chopped
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 1 green chili, chopped
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala
- Salt to taste
- 1 tbsp oil
- 4 cups vegetable broth
- Fresh coriander leaves for garnish
Instructions:
Set the oil on medium heat in a large pot
Put in the cumin seeds and let them pop
Add green chili, garlic, ginger, and onion that has been chopped
Cook the onions until they become clear
Put in the turmeric powder, coriander powder, and garam masala
Soak the tomatoes in water for a while
Put in spinach and sweetcorn kernels
Mix well
Add the vegetable broth
Bring to a boil, then lower the heat and let it cook for 15 to 20 minutes
Blend the soup until it's smooth with an immersion blender
Add salt to your liking
Add fresh coriander leaves as a garnish before serving
